BREAST*****Fried Chicken with Cucumber and Fennel Raita

This is great, D loves it too. Quick and easy to make if you have cutlets from Tarini's.

Ingredients

  • 7 1/2 oz. skinless, boneless chicken or turkey breast cutlets
  • sea salt and freshly ground black pepper
  • Cooking spray
  • 3 tbsp. panko
  • 1 tbsp. EVOO
  • 2 servings cucumber and fennel Raita or Tzatziki sauce (separate recipes)

Preparation

Step 1

* *Sprinkle* chicken with salt and pepper; lightly *coat* both sides of chicken breast halves with EVOO. *Dredge* in panko.

* *Heat* oil in a large non-stick skillet over medium-high heat. *Add* chicken; cook 2 minutes on each side or until done. *Serve* with raita or tzatziki.
