Clams in White Wine Sauce

Ingredients
- 72 small clams
- 1 cup dry white wine
- 1 cup chopped onion
- 1 tbsp. chopped fresh parsley
- 1 tbsp. butter
- 1 tsp. dried thyme
- 1 bat leaf
- 1/8 tsp. pepper

Step 1
Scrub clams under cold water; drain.
In large pot combine wine, onion, parsley, butter, thyme, bay leaf and pepper. Add clams and bring to a boil; reduce heat. Cover and simmer 10 to 15 minutes or until clams open. Simmer 3 minutes more, discarding any clams that do not open.
Divide clams among 6 shallow bowls; keep warm. Strain hot liquid through cheesecloth and ladle over clams.
Serve with French bread.
