Skillet Hash with Spinach

A quick, tasty meal from Fitness Magazine.
Using a really GOOD cheddar makes this recipe tasty. I used a Dublin cheese, it had a good sharp flavor and melted well.

Ingredients

  • 1.5 pounds new red potatoes, cut into chunks
  • 1 tbs. extra-virgin olive oil
  • 8 oz. turkey kielbasa, diced
  • 1 bunch scallions, thinly sliced with the white and green part separated
  • 1 tsp. paprika
  • 1 tsp. Italian seasoning or a sodium-free herb blend
  • 1/2 tsp. garlic powder
  • 1/2 tsp. salt
  • Black pepper
  • 2/5 ounces baby spinach
  • 2 tbs. water(I used white cooking wine)
  • 2.5 oz. cheddar, shredded ( 3/4 cup)

Step 1

1) Place potatoes in a saucepan and cook, covered, over simmering water until just tender. 8-10 minutes.(I just cooked them in the skillet in water, drained and then used it for the meat and onions.)
2) Heat oil in large skillet over medium heat. Add kielbasa and white part of scallions and cook, stirring often, until scallions are slightly softened. 1-2 minutes. Add potatoes and sauté, stirring occasionally, until browned and tender, 5-7 minutes.
3) Sprinkle paprika, Italian seasoning, garlic powder, salt and pepper to taste over the mixture. Stir to coat. Stir in spinach and green part of scallions. Drizzle water or wine ( this is to deglaze the pan) into the skillet, sprinkle with cheese over mixture, cover and cook until cheese is melted.
