Cream of Broccoli Soup

Ingredients
- 1/2 c water
- 1 chicken boullion
- 2 T butter
- 1 1/2 c finely chopped leeks
- 3 c broccoli florets
- 24 oz skim milk
- 2 T flour
- 1/2 t nutmeg
- 1 clove of garlic,minced

Cooking time 20mins
Preparation
Step 1
Bring water to a boil
Add boullion and dissolve
Add broccoli and cook til tender
Melt butter and saute leeks til tender
Add flour and make roux
Season with salt and pepper
Add warmed milk slowly
Whisking as you go
Reduce heat and add Nutmeg, garlic,broccoli and liquid
Simmer and be careful not to boil
Add basil and serve heated
