Oven-melted Tomatoes w/Goat Cheese & Mint

  • Ingredients12 roma tomatoes, halved
  • 2 teaspoons sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 ounces goat cheese, crumbled
  • 1/3 cup fresh mint leaves

Preparation

Step 1


Preheat oven to 300 degrees F. Place tomatoes, cut sides up, on a 15x10x1-inch baking pan. Sprinkle with sugar, salt and pepper. Bake for 1 hour or until sides of tomatoes just begin to crinkle. Let cool. Drizzle with olive oil. Top with goat cheese and mint. Serve at room temperature.
