Ingredients
- 1 cup large flake oats
- 3/4 cup whole wheat flour
- 1 tsp. cinnamon
- 1/2 tsp. baking powder
- pinch each: nutmeg and salt
- 3/4 cup unsweetened applesauce
- 1/3 cup Splenda
- 1 egg
- 2 tsp. vanilla
- 1 apple, cored and finely diced
Preparation
Step 1
Preheat oven to 275F. Line baking sheet with parchment paper. In large bowl, combine oats, flour, cinnamon, baking powder, nutmeg and salt. In separate bowl, whisk together applesauce, Splenda, egg and vanilla. Pour over oats mixture and stir to combine. Add apple and stir to distribute evenly. Drop by heaping tablespoons onto sheet. Bake for about 25 mins. or until firm and slightly golden. Let cool completely. 1 cookie is 1 serving. Freeze up to 2 weeks.
