  • 1/2 cup whole milk ricotta cheese
  • 1 Tbs. granulated sugar
  • 1 1/4 cups Ebelskiver Pancake Mix
  • 2 eggs separated
  • 1 cup milk
  • 2 Tbs. unsalted butter melted plus more for cooking
  • Confectioners sugar for dusting
  • 1/2 cup strawberry or different flavor jam warmed
  • 1/4 tsp vanilla



Step 1

In a small bowl, combine ricotta, gran. sugar and vanilla until well
mixed. Refrigerate until ready to use.

Using pancake mix, eggs, milk and 2 Tbs butter prepare batter according to package instructions.
Brush each well of filled pancake pan with melted butter; heat over medium heat until butter begins to bubble. Pour 1 Tbs batter into each well.
Place 1 tsp ricotta mixture into each pancake top with batter. Cook until bottoms are golden brown 3-4 minutes. Using Ebelskiver turning tools or 2 wooden skewers, turn pancakes over; cook until golden brown about 3 minutes more. Transfer pancakes to large plate. Repeat with remaining
batter and filling.

Dust tops of pancakes with confectioners sugar drizzle with warm jam.
