Ingredients
- 1 Lg Bag Frozen Corn, thawed (May substitute 2 C fresh corn for frozen corn)
- 1/2 c Butter
- 2 Eggs, beaten
- 1/2 t Salt
- 1/8 t Pepper
- 1 T Cornstarch
- 1 C Milk
Preparation
Step 1
1. Place corn in large mixing bowl.
2. In a medium saucepan, melt butter, add cornstarch, salt and pepper. Cook until smooth.
Add milk to saucepan, cook until begins to thicken.
3. Slowly combine thickening with eggs to bring eggs temperature up. Stir into corn. Combine thoroughly.
4. Pour into buttered casserole dish. Bake in water bath at 350 deg. 30 mins. or until pudding sets.
