Ingredients
- 4 flatiron steaks or small sirloin steaks
- 2 large cloves garlic, halved
- 2 tbsp EVOO
- Salt and pepper
- 2 tbsp butter, softened
- 2 tbsp anchovy paste
- 1 pt cherry tomatoes, halved
- 1/4 c pitted black or kalamata olives, halved
- 5 caper berries, drained and sliced
- 1/2 small red onion, chopped
- 1/2 c coarsely chopped flat leaf parsley
Preparation
Step 1
Heat grill or grill pan to medium high. Rub steaks with garlic and drizzle with EVOO. Grill to medium rare and season with salt and pepper.
In a small bowl, mix the butter and anchovy paste. Dollop on top of steaks.
In a bowl, combine tomatoes, olives, capers, onion, parsley and 2 tbsp EVOO. Season with salt and pepper and spoon on top of steaks.
