Ginger Lime Carrots

Ingredients
- 3 lb medium carrots
- 3 c. cold water
- 1 1/2 tsp. salt
- 3 tbsp. salted butter
- 2 tbsp honey
- 2 tbsp fresh lime juice
- 1 tbsp lime peel zest
- 1 tbsp fresh ginger root, grated

Preparation
Step 1
1. Heat carrots, water and salt in large saucepan to boiling, reduce heat.
2 Simmer uncovered until carrots are crisp-tender about 5-8 min.
3. Drain, return carrots to saucepan.
4. In small saucepan over low heat, heat and stir butter, hone, lime juice, zest and ginger until butter is melted and mixture blended.
5. Pour butter mixture over carrots; stir gently over low heat until carrots are glazed, about 2 min.
