Sweet Potato Hash

Ingredients

  • 1/4 cup olive oil
  • 2 sweet potatoes, peeled and chopped
  • 1 onion, finely chopped
  • 1 red bell pepper, finely chopped
  • 1 T BBQ sauce
  • 1 t Cajun Spice Mix
  • 1/4 cup parsley, fhopped
  • 4 eggs
  • 1-2 links chipotle or andouille sausage
  • 1 apple

Preparation

Step 1

Heat 3 T of the oil in a large nonstick skilled over medium high heat. Add the sweet potatoes and sausage and cook, stirring occasionally, for 5 minutes or until the mixture begins to brown. Reduce heat to medium.

Add the onion, apple and bell pepper and cook for 12 minutes longer, stirring more frequently at the end of the cooking time, until the sausage is browned and the potatoes are tender.

Add the BBQ sauce, spice rub and parsley. Toss to combine, then divide among 4 service plates.

Wipe out skillet with paper towel. Reduce the heat to medium-low and add the remining 1 T of oil. Break the eggs in the the skilled and cooked to desired.

Slide an egg on top of each portion of the hash and serve at once.

Tip - cut the apple, sausage and sweet potatoes same size for cooking times.
