Simple, healthy and delicious salad with wild rice, sweet peas, celery, scallions, carrots, yellow peppers, olives and cheese with a homemade dressing of mayonnaise, Teriyaki sauce, salt and pepper. Love it!

Ingredients
- DRESSING:
- 2 cups cooked wild rice
- 1 (9-ounce) package frozen peas, thawed
- 1 cup celery, sliced
- 3 scallions, sliced
- 2/3 cup carrots, shredded
- 1/2 cup yellow bell peppers, diced
- 1 cup Crystal Farms® Swiss Cheese, finely shredded
- 6 large green olives, chopped
- 1/2 cup low-fat mayonnaise
- 2 tablespoons Teriyaki Stir Fry Sauce
- Salt and pepper, to taste

In large bowl, toss salad ingredients. Add dressing; toss. Cover and refrigerate 1 hour prior to serving.
