Mae's Carrot Cake

Recipe is from Sybil Westlund, but was originally given to her by Mae Jarmen from the Canyon Rim 2nd Ward.

Ingredients

  • Cake:
  • 1 &1/2 C cooking oil
  • 4 eggs
  • 2 C. sugar
  • 3 C. grated carrots
  • 2 C. +2 T. flour
  • 2 t. cinnamon
  • 1 t. salt
  • 2 t. baking soda
  • Cream Cheese Frosting:
  • 1 sq. melted butter
  • 8 oz chream cheese
  • 1 pkg (1lb) powdered sugar
  • 1 t. vanilla
  • 1 C. chopped nuts (I use walnuts)

Preparation

Step 1

Cake: Mix 1st 3 ingredients together and add remaining ingredients. Mix Thoroughly Bake at 350 degrees for 40 minutes.

Frosting: Melt 1 sq butter. Pour butter over 8 oz cream cheese. Whip and cool. Add 1 pkg. powdered sugar, 1 t. vanilla and 1 C. chopped nuts.
