Sfiha Blahm Wi Snoobar

Ingredients

  • Stuffing:
  • 6 cups plain flour
  • 2 cups lukewarm yogurt
  • 1 cup olive oil
  • 3 tsp. yeast dissolved in a 1/2 cup warm water
  • 1 tsp. salt
  • 1/4 cup warm water for hands
  • 4 large onions, finely chopped
  • 1 lb. minced lamb
  • 1/2 cup oil
  • 2 tbsp. slat
  • 1/2 tsp. each: pepper, cinnamon
  • 3/4 cup yogurt
  • 2 tbsp. tahineh
  • 2 tbsp. vinegar
  • 1/2 cups pine nuts
  • 5 ripe tomatoes, seeded and chopped

Preparation

Step 1

Sift flour into bowl for pastry. Pour yogurt, salt, oil and yeast into well of flour. Knead dough for 20 mins. Moisten hands. Brush dough with a little oil. Let stand covered 1 hour. Knead 2 mins. and divide into small balls.

Saute onions in oil. Add meat and seasoning. Cook over low heat 5 mins. Mix yogurt, tahineh and vinegar. Add chopped tomatoes and mix well. Add meat mixture. Roll out dough to 1/2 cm thickness. Arrange circles on tray and curl up edges. Fill with 2 tbsp. filling. Sprinkle a few pine nuts on each pie. Let stand 30 mins. Bake 15-20 mins. at 350F.
