Cheese Souffle

Ingredients

  • 3 oz. (75g) butter
  • 4 eggs
  • 2 oz. (50g) cornstarch
  • 560 ml milk
  • 4 oz. (125g) gruyere, parmesan or cheddar cheese
  • salt and pepper to taste
  • paprika, nutmeg

Preparation

Step 1

Preheat oven to 400F. Grease a 7" souffle dish with 1 oz. of butter. Separate the eggs. Melt remaining butter in a saucepan; stir in cornstarch and cook for 1 min. Gradually add the milk, stirring all the time until the sauce thickens. Season with salt and pepper and a pinch of paprika and nutmeg. Take pan off heat and allow mixture to cool slightly. Finely grate cheese and stir into sauce, beating well. In a large bowl, whisk egg whites until they hold stiff peaks, then carefully fold into the sauce with a metal spoon. Pour souffle mixture into prepared dish. Bake just above centre of oven for about 25 mins. or until risen and golden. Remove from oven and serve immediately with a crisp green salad.
