Bacon and Veggie Pasta

Ingredients
- 2 cans stewed tomatoes
- 2 c. fresh broccoli florets
- 2 med. carrots, thinly sliced
- 1/2 tsp. salt
- 1/2 tsp dried oregano
- 1/4 tsp. basil
- 4 bacon strips, diced
- 1/2 lb. fresh mushrooms, sliced
- 1/3 c. chopped green pepper
- 1/4 c. chopped onion
- 2 garlic cloves, minced
- 16 oz. uncooked medium shell pasta
- 1/4 c. shredded parmesan cheese

Preparation
Step 1
1. In a large saucepan, combine the first 7 ingredients.
2. Bring to a boil. Reduce heat; cover and simmer for 25-30 min or until broccoli and carrots are tender.
3. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 1 tbsp drippings.
4. In the drippings saute the mushrooms, green pepper, onion and garlic until tender; add to tomato mixture and heat through.
5. Meanwhile, cook the pasta according to package directions. Drain and place in serving bowl, top with vegetable mixture.
6, Sprinkle with bacon and parmesan cheese.
