Buttermilk Oat Waffles

A warm waffle topped with your favorite jam or syrup makes a hearty and special breakfast anytime. Once prepared, they can be wrapped individually and frozen for up to three weeks. Reheat in the toaster.

Ingredients

  • 1 cup whole-wheat flour
  • 1 cup old-fashioned rolled oats
  • 1 Tbsp. plus 1 tsp. baking powder
  • 3 Tbsp. canola oil
  • 1 1/4 cups of one-percent or fat-free buttermilk
  • 1/2 cup water
  • 1 large egg
  • 3/4 cup sugar-free jam or your favorite topping

Preparation

Step 1

1. Combine flour, oats, baking powder, salt, and sugar substitute in a medium bowl. Whisk together oil, buttermilk, water, and eggs in a separate bowl. Pour the buttermilk mixture into the flour mix and stir until combined.

2. Heat waffle iron; coat lightly with cooking spray. Add a generous 1/2 cup batter per waffle and cook until browned and crisp, about five minutes. Dollop with your favorite topping.
