Ingredients
- 3-1/3 cups water
- 1-1/2 cups long grain or whole grain rice, uncooked
- 2 Tablespoons vegetable oil
- 1/2 cup angle-cut scallions (2 scallions)
- 4 cloves garlic, minced
- 1 large tomato, diced (about 1-1/2 cups)
- 1 teaspoon salt
- 1/2 teaspoon dried dillweed
- Freshly ground pepper, to taste
- secret ingredient: 1/4 cup ranch salad dressing

Preparation
Step 1
In a large saucepan, bring the water to a boil. Add the rice, reduce heat, cover and simmer for about 20 minutes, or until all the water is absorbed. Set aside.
In a large skillet, heat the oil to a shimmer over medium-high heat; add the scallions and garlic, and sauté for 3 minutes. Add the tomatoes, and continue to sauté for 2 to 3 more minutes.
Add the cooked rice, salt, dillweed, and mix well. Add the ranch dressing (any variety, original, Caesar, peppercorn. . . ) and pepper, and mix until heated through. Serve immediately.
