Ingredients

  • 3-⅓

    cups water

  • 1-½

    cups long grain or whole grain rice, uncooked

  • 2

    Tablespoons vegetable oil

  • ½

    cup angle-cut scallions (2 scallions)

  • 4

    cloves garlic, minced

  • 1

    large tomato, diced (about 1-½ cups)

  • 1

    teaspoon salt

  • ½

    teaspoon dried dillweed

  • Freshly ground pepper, to taste

  • secret ingredient: ¼ cup ranch salad dressing

Directions

In a large saucepan, bring the water to a boil. Add the rice, reduce heat, cover and simmer for about 20 minutes, or until all the water is absorbed. Set aside. In a large skillet, heat the oil to a shimmer over medium-high heat; add the scallions and garlic, and sauté for 3 minutes. Add the tomatoes, and continue to sauté for 2 to 3 more minutes. Add the cooked rice, salt, dillweed, and mix well. Add the ranch dressing (any variety, original, Caesar, peppercorn. . . ) and pepper, and mix until heated through. Serve immediately.
