Ingredients
- 2 lbs. Granny Smith apples, halved, cored, peeled, sliced
- 2 lbs. Golden Delicious apples, ditto
- 2 c. water
- 2 Tbsp. (or more) fresh lemon juice
- 1/2 c. sugar
- 1/2 tsp. (I add a bit more) ground cinnamon
- 1/4 (generous) ground cardamom
Preparation
Step 1
Combine all apples, 2 cups water, and 2 Tbsp. lemon juice in heavy large pot. Bring to boil over high heat. Reduce heat to medium, cover and simmer until apples are tender, about 20 minutes.
Uncover and cook until mixture is thick, stirring frequently, about 10 minutes longer. Mash apples slightly with potato masher until chunky applesauce forms. Stir in sugar and spices. Cool. Add more lemon juice if desired.
Transfer to bowl, cover and refrigerate over night.
Can be made 2 days ahead; keep refrigerated.
