Fresh Fettuccine with Roasted Chicken and Broccoli Rabe

Ingredients

  • Salt
  • 1 lb. broccoli rabe, cut into 3" pieces
  • 1 package fresh fettuccine
  • 1 14 oz. can chicken broth
  • 1/4 c fresh lemon juice
  • 3 c shredded roasted chicken
  • 3/4 c freshly grated parmesan cheese
  • 1/2 c toasted pine nuts
  • 2 tbsp chopped fresh flat leaf parsley
  • 2 tbsp olive oil
  • 1 tbsp lemon zest
  • Freshly ground black pepper

Preparation

Step 1

Bring a large pot of salted water to a boil. Add the broccoli rabe and cook until crisp tender. Using a slotted spoon, transfer broccoli to a bowl. Add fettuccine to pot and cook, stirring to prevent clumping. Drain, reserving 1/2 c cooking liquid.

In a large heavy skillet, bring broth and lemon juice to a boil over medium high heat. Boil until reduced by half. add chicken and simmer until heated through. Add pasta, broccoli, 1/2 c parmesan cheese, pine nuts, parsley, oil and lemon zest. Toss to coat. Add some of the cooking liquid if need more moisture. Season with salt and pepper to taste and top with more parmesan cheese at service.
