Baked Carrots and Potatoes

Ingredients
- Butter for the baking dish; plus
- 2 tbsp. butter
- 4 med. baking potatoes, sliced
- 4 med. carrots, sliced
- 1 med. onion cubed
- Salt and freshly ground black pepper
- 1/2 tsp sweet paprika
- 1/2 c. evaporated milk
- 1/2 c water

Preparation
Step 1
1. Preheat oven to 350 degree F, and butter a 8x8 inch baking dish.
2. Place the vegetables in the prepared dish, and dot with remaining butter.
3. Mix the seasonings with the milk and water, and pour over the vegetables.
4. Bake, stirring occasionally, until the vegetables are very tender and the top is slightly browned.
