Loaded Baked Potato and Chicken Casserole
- 2 lbs. chicken breast, cubed
- 10-12 small red potatoes, diced
- 1/2 cup olive oil
- 1 tsp salt
- 1 tsp pepper
- 1/2 Tbsp garlic powder
- 2 cups mexican cheese
- 1/2 cup crumbled bacon
Preheat oven to 475.
Mix olive oil, salt, pepper and garlic powder.
Add potatoes and coat with the mixture.
Place potatoes in greased baking dish, leave as much of the mix as possible.
Bake potatoes for 1 hour, flipping them every 15-20 minutes.
Coat chicken with rest of mixture and cook in skillet over medium heat until done.
Turn oven down to 400.
Add chicken, cheese and bacon.
Put back in oven and bake for 5 minutes or until cheese is melted.
