Ingredients

  • 4 bone-in pork rib chops, cut 3/4 inch thick (about 1-3/4 pounds total)
  • 1/4 cup honey
  • 4 teaspoons finely shredded lemon peel
  • 1/4 cup lemon juice
  • 2 tablespoons snipped fresh mint or 1 teaspoon dried mint, crushed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon cayenne pepper

Preparation

Step 1


1. Trim fat from chops. Place chops in a large resealable plastic bag set in a shallow dish. For marinade, in a small bowl stir together honey, lemon peel, lemon juice, mint, oil, salt, and cayenne pepper. Pour over chops in bag. Seal bag; turn to coat chops. Marinate in the refrigerator for 4 to 24 hours, turning bag occasionally. Drain chops, discarding marinade.

2. For a charcoal or gas grill, grill chops on the rack of a covered grill directly over medium heat for 11 to 13 minutes or until chops are slightly pink in center (160 degrees F), turning once halfway through grilling time.
