Ingredients
- 2 cups white sugar
- 1 cup unsalted butter, softened
- 6 eggs
- 2 3/4 cups matzo cake meal
- 1/2 teaspoon salt
- 3/4 cup potato starch
- 1 cup mini semisweet chocolate chips
- 1 cup toffee bits
- 1 tablespoon cinnamon sugar
Preparation
Step 1
1. Preheat oven to 350 degrees. Grease baking sheet or line with parchment paper or a silpat.
2. In a large bowl, beat sugar and butter until light and fluffy. Mix in the eggs one at a time. Sift together cake meal, salt and potato starch. Stir into the batter just until blended. Gently mix in chocolate and toffee chips. You can then chill the dough briefly so it is easy to handle. It will be sticky. (I put it on the baking sheet and cover each piece with saran wrap to smooth it out into logs and don't bother to cool.)
3. Divide the dough into halves and form each half into a five inch wide loaf that is about 1 inch thick. Sprinkle with cinnamon sugar.
4. Bake for 45 minutes in the preheated oven. Cool slightly, then slice into 1 inch slices. I put them back in the oven for about 5 minutes or so, turn them and keep an eye on them until they are brown on both side. I also sprinkle more cinnamon sugar on top before I put them back in the oven to crisp up.
