Ingredients
- 4 Boneless Skinless Chicken Breasts Halves, cut into 1" pieces
- 1 jar (30 Oz) Spaghetti Sauce
- 1 Medium Eggplant (peeled & Coarsely Chopped)
- 2 Tomatoes, coarsely chopped
- 2 Small Zucchini, sliced
- 1 Green Pepper, cut into 1" pieces
- 1 Large Onion, chopped
- 3 Garlic Cloves, minced
- 1 tsp Dried Basil Leaves
- 1 tsp Dried Oregano Leaves

Step 1
In a large bowl, combine all ingredients; mix well. Pour into a 3-1/2 or 4-quart crock pot. Cover, cook on low setting for 8-10 hours or until chicken is tender and no longer pink.
