Ingredients

  • 4

    Boneless Skinless Chicken Breasts Halves, cut into 1" pieces

  • 1

    jar (30 Oz) Spaghetti Sauce

  • 1

    Medium Eggplant (peeled & Coarsely Chopped)

  • 2

    Tomatoes, coarsely chopped

  • 2

    Small Zucchini, sliced

  • 1

    Green Pepper, cut into 1" pieces

  • 1

    Large Onion, chopped

  • 3

    Garlic Cloves, minced

  • 1

    tsp Dried Basil Leaves

  • 1

    tsp Dried Oregano Leaves

Directions

In a large bowl, combine all ingredients; mix well. Pour into a 3-1/2 or 4-quart crock pot. Cover, cook on low setting for 8-10 hours or until chicken is tender and no longer pink.
