Ingredients

  • Topping:
  • 2 C Sweet Potatoes mashed (I usually buy 4-5 large Yams, cut up in 1-2” cubes and boil until soft) BE SURE TO PEEL FIRST
  • 2 eggs
  • 1 1/4 Cup Sugar
  • 1 stick of Real Butter
  • 1 Can Evaporated Milk
  • 1/2 tsp Vanilla
  • 1/2 tsp Nutmeg
  • 1/2 tsp Cinnamon
  • Topping:
  • 3/4 Cup Cornflakes crushed
  • 1/2 stick of butter melted
  • 1/2 C brown sugar
  • Mini marshmallows

Preparation

Step 1

Casserole:
Boil Sweet Potatoes until soft in a large dutch oven; Drain and add the stick of butter to melt; add Sugar, Milk and spices; Mix well with mixer.

Topping:

Mix Topping and spread on top of Potato casserole mixture.

Bake at 400 degrees for 20 minutes.

Then add mini marshmallows and cook 10 minutes.
