Ingredients
- Topping:
- 2 C Sweet Potatoes mashed (I usually buy 4-5 large Yams, cut up in 1-2” cubes and boil until soft) BE SURE TO PEEL FIRST
- 2 eggs
- 1 1/4 Cup Sugar
- 1 stick of Real Butter
- 1 Can Evaporated Milk
- 1/2 tsp Vanilla
- 1/2 tsp Nutmeg
- 1/2 tsp Cinnamon
- Topping:
- 3/4 Cup Cornflakes crushed
- 1/2 stick of butter melted
- 1/2 C brown sugar
- Mini marshmallows

Preparation
Step 1
Casserole:
Boil Sweet Potatoes until soft in a large dutch oven; Drain and add the stick of butter to melt; add Sugar, Milk and spices; Mix well with mixer.
Topping:
Mix Topping and spread on top of Potato casserole mixture.
Bake at 400 degrees for 20 minutes.
Then add mini marshmallows and cook 10 minutes.
