You can either do this whole recipe by crockpot or simmer and keep on low in a big pot to get all of the flavors.

- 2 Packages of Oxtail Meat
- 2 Peppers
- 2 Onions
- 1 Can Canellini Beans
- 1 Can Kidney Beans
- 3 Small Cans of Tomato Sauce
- Few Bay Leaves
- Mint Sauce (optional)
- Oxtail Seasoning
Preparation time 20mins
Cooking time 240mins
Brown oxtails in pan on each side for a few minutes each side.
After browned, take out and drain the fat in a strainer.
In another pan, saute onions, peppers and garlic until slightly transparent then add tomato sauce and cans of beans and simmer for about 10 mins.
When that is complete, you then can start putting layers in your crockpot.
1st layer of browned oxtails
2nd layer bean and tomato sauce
3rd layer of browned oxtails
Final layer of bean and tomato sauce
Depending on how fast or how slow you want it, I choose low for either 4 hours or 8 hours.
