Preparation

Step 1

Unwrap the roast and place it in a roasting pan. Add au jus sauce and water to half full in roasting pan. Cover with a tin foil blanket and place in the refrigerator overnight.

When ready for cooking, preheat the oven to 350° F. Remove roast from the refrigerator and place, still covered, in the oven. The cooking time is approximately 30-35 minutes per pound of roast.

After 1-2 hours, use a baster to remove juices from bottom of the pan and pour over the meat. Can also use an injector to inject juices into the roast.

When the temperature gets to 145°, the roast is medium rare in the middle and well done on the ends. At 155°, the roast is done throughout.

After removing roast from oven, let the roast sit, covered, for 15 minutes.
