Huckleberry Pie

Huckleberries are delicious raw, make excellent pies, jellies, wines, are good in pancakes. They dry and freeze well.

Ingredients

  • 1 qt. huckleberries
  • 1 cup sugar
  • 1/8 tsp salt
  • 1 tsp butter
  • 1 tsp lemon juice
  • 1 tsp nutmeg
  • 3 tbsp cornstarch

Preparation

Step 1

Preheat oven to 425 F.

Toss berries with dry ingredients; put into prepared crust. Dot with butter, add lemon juice. Roll out top crust. Cut design in center or slits - place over filling. Seal - flute edges. Place in oven for 15 minutes at 425 F. Reduce heat to 350 F or 325 F and bake for 40 to 50 minutes. Eat!! Enjoy!!!
