Chicken with mushrooms and mozzarella
Rate this recipe
- 2 tbs butter and olive oil
- 1 carton sliced mushrooms
- 4-6 bone in chicken thighs
- 4 shallots
- 1 Tbs dried basil
- Grated mozzarella
Sauté thighs, skin side down first, on both sides until brown. Sprinkle in shallots, mushrooms and basil. Mix with juices.
Bake at 350 for 45 minutes add cheese last minute or so until melted.
