Ingredients

  • 1/2

    cup chopped fresh pineapple

  • 1/3

    cup chopped green pepper

  • 1/3

    cup chopped sweet red pepper

  • 1/3

    cup chopped sweet yellow pepper

  • 1

    kiwifruit, peeled and thinly sliced

  • 1

    tbsp. white wine vinegar

  • 1 1/2

    tsp water

  • 1

    tsp brown sugar

  • 1

    tsp peeled, grated gingerroot

  • 1/8

    tsp crushed red pepper

    tbsp. lemon juice

  • 1/4

    tsp curry powder

  • 1/8

    tsp salt

    (8 ounce) grouper fillet, halved

  • Vegetable cooking spray

Directions

Combine first 10 ingredients; cover and chill at least 2 hours. Combine lemon juice, curry powder, and salt. Place fillets on rack of a broiler pan coated with cooking spray; brush with lemon juice mixture. Broil 5 1/2 inches from heat 8 minutes or until fish flakes easily when tested with a fork. Transfer fillets to a serving platter; top evenly with pineapple mixture. Yield: 6 servings (140 calories per serving).
