  • 4 TB Sherry or Red Wine Vinegar
  • 2 tsp agave nectar
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon salt
  • 3 TB extra-virgin olive oil
  • 1/3 cup thinly vertically sliced red onion
  • 4-ounce arugula
  • 4-ounce baby spinach
  • 1/4 cup crumbled blue cheese
  • 6 ounce package (1package) fresh raspberries
  • Roasted Chicken Breast, sliced

Step 1

Combine vinegar, agave, mustard, pepper, and salt in a large bowl, stirring with a whisk. Gradually add oil, stirring constantly with a whisk.

Add salad greens; toss gently to coat. Mix onion, cheese, chicken and raspberries.
