Heart Attack on a Plate Chopped Chicken Livers

Ingredients

  • 1 pound chicken livers
  • 3 large onions
  • 1/4 cup oil (for frying)
  • 4 hard-boiled eggs, peeled
  • salt and pepper

Preparation

Step 1

1. Cook the livers until done any way you please. I grill them under the broiler.
2. Chop the onions medium-coarsely and fry in the oil until browned, but not burned. You have to babysit the onions, constantly stirring, so they don't burn. This can take some time, so pull up a chair with a good book.
3. Process the livers in the food processor.
4. Add the hard boiled eggs and give it another whirl until they are incorporated with the liver.
5. Add the onions and any extra oil from the bottom of the pot. Be sure to scrape every last bit of onion into the processor bowl because this is where the major flavor comes from.
6. Add salt and pepper to taste.
7. Whirl everything around in the food processor until it reaches the consistency you want.
