Ingredients
- 4 tablespoons butter
- 1 onion chopped
- 2 teaspoons curry powder
- 2 tablespoons flour
- 4 cups chicken stock
- juice of 1/2 lemon
- 2/3 cup half & half
- 4 oz. white meat chicken cut into thin strips
- chives to garnish

Preparation
Step 1
Saute onion in butter until soft.
Stir in curry & flour - cook one minute
Blend in chicken stock and bring to a boil. Simmer 5 minutes.
Cool & puree in a blender
Whisk in lemon juice and half & half.
Stir in chicken pieces and refrigerate overnight.
Garnish & serve cold.
Note: Can substitute chopped shrimp for chicken.
