Ingredients
- 3 tbsp Extra virgin olive oil
- 2 tsp sherry vinegar
- 2 tsp balsamic vinegar
- 1/4 tsp kosher or sea salt
- 4 cups baby spinach leaves
- 3 oz gruyere cheese, cut in 1/2 inch cubes
- 1/4 cup dried cranberries
- 1/2 cup chopped walnuts plus 10-12 walnut halves
Preparation
Step 1
In the bottom of a salad bowl, using a fork or whisk, mix together the olive oil, the 2 vinegars and the salt. Add the spinach, cheese, cranberries, and the chopped walnuts. Toss the salad to coat well, then garnish with the remaining walnuts.
