Easy Shrimp Scampi

Ingredients

  • 3/4 pound spaghetti
  • 1/4 cup plus 3 tablespoons butter
  • 2 clove garlic, crushed
  • 1 lemon, juice and grated rind of
  • 2 tablespoons chopped fresh parsley
  • 1 pound jumbo shrimp, cleaned, shelled and deveined
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Preparation

Step 1

Bring a large saucepan of lightly salted water to a boil. Add the pasta and cook according to the package directions.


Meanwhile, melt the butter in a large skillet over medium heat. Add the garlic and cook for 2 minutes. Add the lemon juice and zest. Bring to a boil and allow mixture to reduce by half.


Stir in the parsley, then add the shrimp and increase heat. Sauté, stirring constantly, until the shrimp turn pink and are just cooked through, 2–3 minutes. Add the salt and pepper.

Drain the spaghetti and add to the skillet with the shrimp; toss until combined. Divide among 4 warmed serving bowls. Serve immediately.

Grandma's Secret Tip:

For a spicier dish, add 1 chopped, deseeded red chile pepper and 1 teaspoon grated ginger with the garlic in Step 2.
