Karens lasagne

Ingredients

  • Sauce:
  • 1 kg mince meat (premium)
  • 1 bottle of Passata or lego's sugo di pomodoro 700gm
  • 1 large can diced tomatoes
  • 2 cloves garlic (smashed)
  • 1 brown onion (Chopped very small)
  • 1 medium carrot (Chopped small)
  • 1/2 cup frozen baby peas
  • oil enough to cover the base of the pan
  • teaspoon of salt, shake of pepper, teaspoon dried basil and the same of oregano.
  • Lasagne:
  • 2 pkts fresh lasagne sheets
  • 1 large pkt mozzarella cheese
  • 1 small pkt ham (chopped)
  • Handfull of grated parmesan cheese

Preparation

Step 1

Heat oil in a large saucepan
Add onions and cook stirring all the time until they are translucent add carrots and cook for a few minutes.
Add mince and cook until brown.
Add passata, tomatoes, and water ( about 3/4 of the passata jar full)
Add peas.
Add salt, pepper, basil and oregano.
Bring to the boil, reduce to a slow simmer and cook for about 3 hours.

Make sure you cook it long enough that the sauce reduces to a nice thick consistency.

Put a small amount of the sauce on the bottom of your baking tray. (Maybe 3 tablespoons)
Put a layer of pasta on tray
add enough sauce to cover pasta , hand full of mozzarella and 1/3 ham
repeat until the tray is full.
The last layer will be sauce, with a layer of mozzarella on top and sprinkle the parmesan on the top.
Bake at 180 for about an hour but check it to make sure its not cooking too fast on the top

I cover mine with foil for about half the cooking time. Then take it off and finish the cooking. It should be browned on top but not burnt.
