Black Bean and Corn Salsa

made this once but substituted tomatoes with green chilis and used a red onion. It needed more zip. Maybe chop a jalapeno. Below is recipe with my modifications. Ingredients
- 1 15-ounce can black beans, drained and rinsed
- 1 15-ounce can whole-kernel corn, drained (frozen doesn't seem as good)
- 1 14.5 ounce can diced tomatoes with Jalapenos, drained (or 3-4 fresh tomatoes diced)
- 4 hot green banana peppers, diced (or one Jalapenos, etc.)
- 1/2 cup sliced green onions (1 med. red onion, diced)
- 2 Tablespoons olive oil (approx.)
- 1/2 tsp. ground cumin
- 1/4 cup chopped fresh cilantro - be generous
- 1 Tablespoon lime juice - be generous
- 1 Tbs balsamic vinegar (approx.)
- 1 Tbs white vinegar (approx.)
- 1 Tbs sugar
- 1/2 tsp salt
Preparation
Step 1
Combine all ingredients in a medium bowl and toss.
A similar recipe from Paula adds in:
1 envelope Good Seasons mix
2 avocados chopped
Serve with warmed tortilla chips.
Makes about 8 servings.
