Black Bean and Corn Salsa

By

made this once but substituted tomatoes with green chilis and used a red onion. It needed more zip. Maybe chop a jalapeno. Below is recipe with my modifications. Another website for inspiration: http://cookieandkate.com/2015/cowboy-caviar-recipe/ or also check out Jim Vlasic's recipe also in my cookbook.

Ingredients

  • 1 15-ounce can black beans, drained and rinsed
  • 1 15-ounce can whole-kernel corn, drained (frozen doesn't seem as good)
  • 1 14.5 ounce can diced tomatoes with Jalapenos, drained (or 3-4 fresh tomatoes diced)
  • 4 hot green banana peppers, diced (or one Jalapenos, etc.)
  • 1/2 cup sliced green onions (1 med. red onion, diced)
  • 2 Tablespoons olive oil (approx.)
  • 1/2 tsp. ground cumin
  • 1/4 cup chopped fresh cilantro - be generous
  • 1 Tablespoon lime juice - be generous
  • 1 Tbs balsamic vinegar (approx.)
  • 1 Tbs white vinegar (approx.)
  • 1 Tbs sugar
  • 1/2 tsp salt

Preparation

Step 1

Combine all ingredients in a medium bowl and toss.

A similar recipe from Paula adds in:
