Ingredients

  • Crust:

  • 2

    cups graham crackers

  • ½

    cup butter, melted

  • ¼

    cup sugar

  • 2

    T ground almonds

  • Filling:

  • 4

    packages (8 oz each) cream cheese, softened

  • 1-½

    cups sugar

  • 2

    T Amaretto

  • 1

    t vanilla extract

  • 1

    t almond extract

  • t salt

  • 4

    eggs, lightly beaten

  • Topping:

  • 2

    cups sour cream

  • ¼

    cup sugar

  • 1

    t almond extract

  • ½

    cup slivered almonds

Directions

In a large bowl, combine the cracker crumbs, butter, sugar and ground almonds. Press into the bottom and 1 inch up the sides of a greased 9 inch springform pan. In a large bowl, beat cream cheese and sugar until smooth. Beat in the Amaretto, extracts and salt. Add eggs; beat on low speed just until combined. Pour into crust. Place on baking sheet. Bake at 325º for 55-60 minutes or until center is almost set. Remove from oven. Let stand for 5 minutes. Combine the sour cream, sugar and almond extract; spread over top of cheesecake. Bake 5 minutes longer. Remove from oven and sprinkle with silvered almonds. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; Cool 1 hour longer. Refrigerate overnight. Remove sides of pan. Serve with whipped cream if desired.
