Rhubarb Orange Breakfast Bread

Ingredients

  • 1/3 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 tea. vanilla
  • 2 cups flour
  • 1 1/2 tea. baking powder
  • 1/2 tea. baking soda
  • 1/2 tea. salt
  • 1/4 tea. ginger
  • 1/4 tea. nutmeg
  • 1/2 cup orange juice
  • 1 cup chopped fresh or frozen rhubarb
  • 1/2 cup slivered almonds
  • 2 tea. grated orange peel

Preparation

Step 1

In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.

Combine the flour; baking powder, baking soda, salt, ginger and nutmeg; add to creamed mixture alternately with orange juice. Fold in the rhubarb, almonds and orange peel.

Transfer to a gr3ased 9x5 loaf pan. Bake at 350 degrees for 55-65 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing form pan to a wire rack.
