French Toast & Variations

Ingredients

  • 4 eggs
  • 2/3 cup milk or half and half
  • 2 teaspoons of cinnamon
  • 8 thick slices of 2-day old bread
  • Butter
  • Maple Syrup

Preparation

Step 1

Beat the eggs, milk, and cinnamon together the night beforehand, and allow to rest in the refrigerator overnight. That improves the custard and makes for less to worry about in the morning.

Dip each slice of bread into the custard, and allow to soak for 20 to 30 seconds on each side. Remove and let the bread sit for a minute or two on a wire rack to more fully absorb the egg mixture.

Pre-heat a heavy skillet over medium-high heat, then add butter (or vegetable oil) and let it begin to sizzle. Add the bread and toast on both sides for a total time of 5 to 10 minutes.

Serve hot with butter and maple syrup, and maybe some fresh berries that have been warmed up.

VARRIATIONS

• add a bit of orange citrus to the batter
• add a bit of vanilla or almond extract to the batter
• add a bit of honey to the batter
• season the batter with cardamom, cloves, allspice, or nutmeg
• for a crispier exterior, add a bit of flour to the batter, or dip the toast into crushed breadcrumbs and brown sugar, corn flacks, or cashews, or pecans.

TIP
Use bread that already has a lot of egg in it, such as challah or brioche
