Strawberry Pina Colada Pie

Ingredients
- 1 pkg.(10 oz) frozen strawberries in syrup ,thawed
- 1 pkg. (3 oz) pineapple gelatin mix
- 1/2 cup boiling water
- 1 cup coconut sorbet, softened
- 10 drops red liquid food coloring
- 1 cont. (16 oz) frozen whipped topping,thawed
- 1 pkg. (6 oz) prepared shortbread pie crust
- 4 large strawberries halved lengthwise
- 1 tbs. shredded coconut, toasted

Preparation
Step 1
• Using a slotted
spoon, remove 1/2
cup frozen straw-
berries from syrup;
chop. Reserve. In
blender, puree
remaining frozen
strawberries with
syrup until smooth
• In medium bowl,
whisk together
gelatin mix and
boiling water until
dissolved. Whisk in
sorbet, pureed
strawberries and
coloring. Chill until
just thickened, 20 minutes.
• Whisk in 3 cups
whipped topping.
Stir in reserved
chopped strawber-
ries. Spread evenly
in crust. Cover with
plastic wrap;
refrigerate until set,
at least 4 hours.
Remove wrap.
Spread remaining
topping over pie.
Top with strawberry
halves and coconut.
