  • 1 cup whole milk
  • 1 cup Idaho® Spuds™ Classic Flakes
  • 1 tablespoon butter
  • 1/4 cup black beans, drained
  • 1/4 cup fresh corn kernels
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup shredded Cheddar cheese (plus extra for topping)
  • 12 mini-phyllo cups, thawed

Step 1

Simmer whole milk and whisk in Idaho® Spuds™ Classic Flakes. In a sauté pan, melt butter and sauté black beans, corn, and cilantro. Season with cumin, salt, and pepper. Add previously made Idaho Spuds and shredded cheese. Spoon mixture into phyllo cups, top with extra cheese and bake for 5 minutes at 375 degrees Fahrenheit or until cheese is melted. Serve topped with your favorite salsa and fresh cilantro.
