Ingredients
- 10 oz. frozen broccoli florets
- 6 large eggs
- 1/2 cup fat-free half and half
- 1/8 tsp freshly grated nutmeg
- Ground pepper
- 3/4 cup (3 ounces) cheddar cheese
- Cooking spray
Preparation
Step 1
Preheat oven to 350 degrees. Spray a 9-inch pie dish with cooking spray. Set aside.
Bring a medium pot of water to a boil. Add broccoli; cook 1 minute. Drain well; transfer to a cutting board and blot dry with paper towels. Chop coarsely.
In a large bowl, whisk together eggs, half-and-half, and nutmeg. Add ground pepper to taste. Stir in broccoli and cheese.
Pour broccoli mixture into pie plate and bake until golden brown, 35 to 40 minutes.
