Marinated Kale Salad

Delicious raw salad that showcases kale's ability to tenderize when marinated. Make twice the recipe 'cuz there won't be enough for seconds!

Ingredients

  • For the marinade:
  • 1 c. sliced shiitake mushrooms
  • 4 c. small pieces kale
  • 1 c. shredded carrots
  • 1 c. julienne-cut cucumbers
  • 1/4 c. sesame seeds
  • 1 tbls. olive oil
  • 1/3 c. orange juice
  • 2 1/2 Tbls. tamari
  • 2 1/2 Tbls. rice vinegar
  • 1/2 tbls. sesame oil
  • 1/2 jalapeno pepper
  • 1/4 tsp. salt

Preparation

Step 1

For the marinade:
Whisk in blender until all ingredients are well combined.

For the Salad:
In a large bowl, place kale, carrots, and cukes. Drizzle with marinade and toss until well coated (you may not need all the marinade...or make a bigger salad). Remove shiitake mushrooms from liquid and add to salad mixture along with the sesame seeds. Toss lightly. Divide amongst 4 plates and enjoy.
