Ingredients
- Red Onion
- Cherry Tomatoes
- Corn
- Zucchini
- Yellow squash
- Red pepper
- Green pepper
- Yellow pepper
- Japanese eggplant
- Mushrooms
- Small red potatoes
- Skewers
Preparation
Step 1
Parboil the potatoes
Cut up all veggies so that they are the same size.
Put the veggies in a big bowl and toss with generous amount of olive oil, salt, and pepper and any herbs desired (dried or fresh).
Assemble the veggies on the skewers in any order.
Grill over medium heat until slightly charred and cooked through
