Carrot Cake

Ingredients

  • Icing:
  • 3 cups grated carrots
  • 2 cups sugar-remove 2 Tbs/cup
  • 1 1/2 cups wesson oil
  • 6 eggs
  • 3 cups flour plus 3 Tbs
  • 1 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp cinnamon
  • 1 cup chopped pecans
  • 8 oz cream cheese
  • 1 stick margarine
  • 4 cups powdered sugar
  • 1 tsp vanilla

Preparation

Step 1

Heat oven to 300 degrees.

Mix in order given. Bake in tube or 9x13 pan for 1 hour or until test done.

Icing:
Cream all ingredients together well. Spread on cake when cool.
