Shrimp and Scallops Veracruz - WW

Ingredients

  • Combine in bowl (Chill for 30 min.):
  • 1/2 # shelled and deveined large shrimp
  • 1/2 # sea scallops
  • Juice of 1/2 large lime
  • 1/4 tsp salt
  • 1 T olive oil
  • 1 chopped onion
  • 3 minced garlic clove
  • 2 tsp minced fresh oregano
  • 1 3/4 canned no salt crushed tomatoes (28 oz can)
  • 2/3 c pitted and quartered picholine olives
  • 2 T chopped pickled jalapenos plus 1 T pickling juice

Preparation

Step 1

1.Heat oil in skillet and add onion until softened 5 min.
2.Add garlic and oregano, cook for about 45 seconds. Add tomatoes, olives and jalapenos. Bring to boil.
3.Stir in shrimp and scallop mixture. Reduce heat and simmer, covered, until seafood is just opaque in center, about 7 min.
