Molten chocolate cake

Ingredients

  • 1 stick plus 3 tbsp butter, cut into pieces
  • 1/2 cup flour
  • 5.5 oz bittersweet chocolate, chopped (1.25 cups)
  • 5 eggs
  • 3/4 cup sugar
  • pinch salt

Preparation

Step 1

Butter and flour 6 six-ounce ramekins (2 inch deep).
Melt butter and chocolate in a double boiler. Whisk together eggs and sugar until pale and thick, 4 minutes. Sift flour and salt into another bowl.
Fold egg mix into chocolate mix. Immediately fold in flour mix. Divide batter into ramekins equally, filling 3/4 full.
Transfer to a rimmed baking sheet. Refrigerate 1 hour.
Preheat oven to 400. Bake until just set, 14-16 minutes. Let cool 3 minutes. Turn out onto plates.
